Whole Wheat & Oat Date Muffins

These are the most delicious healthy muffins you will make. They contain no refined sugars, no oil, no dairy, are so easy to make and of course completely divine.


Recipe makes 12 small muffins/ 6 large muffins


Ingredients:

wet

  • 2 eggs

  • 1 tbsn vanilla essence

  • 1/3 cup honey

  • 1/2 cup Almonds Milk (Alpro)

  • 64g/ 4 tbsn pecan nut butter (ButtaNut Spreads)

  • 1 medium ripe banana

dry

  • 1 cup oat flour (ground at home)

  • 1 cup stone ground whole wheat flour

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1 tsp bicarbonate of soda

  • 1 tsp baking powder

  • 1 cup chopped dates (can use raisins is you prefer)


Method:

  1. Prepare a muffin tray and grease with spray and cook (set aside)

  2. Pre heat oven to 180 deg

  3. Add all dry ingredients into a mixing bowl (dont add dates just yet) and combine.

  4. Add all wet ingredients into another mixing bowl and combine (mash banana with a fork)

  5. Add wet ingredients in with dry ingredients and gently combine (dont over mix)

  6. Fold in chopped dates

  7. Evenly distribute mixture into prepared muffin tray, chop up a few extra dates and add them to the top of the muffins.

  8. Place tray in oven and bake for 15-20 minute or until a skewer poked into muffin comes out clear

  9. Let cool for a few mins and enjoy warm
