These healthy & delicious little treats can be eaten in the morning with your coffee, a tea time snack, on the go energy bite, pre-training energy booster, after dinner dessert... you name it!
1 cup ground almonds
1/2 cup cocoa/cacao powder
1 tbsp ground flax seed (if possible, use whole flax seeds and grind them yourself)
Pinch of salt
1 cups rolled oats
270g dates (soaked weight) *make sure the dates are very soft*
2 tbsp date water (don’t throw out the water you soaked the dates in as you will need some for the mixture)
3 tbsn coconut oil, melted
1/2 cup desiccated coconut
Add the almonds to a food processor and process about 30 seconds, until finely chopped.
Add cocoa/ cacao, flax seed, salt and oats. Process another 20 seconds or so, until blended.
Add dates and coconut oil. Process for 2-3 minutes or until mixture is well blended. You may need to stir every minute so everything gets mixed equally.
Test the mixture so it is firm enough to form into balls. If it’s not or too dry, add 2 tbsn date water.
Form into balls - to measure ball size equally measures each ball to be 1 tbsn in size.
Mix them around in some desiccated coconut. Put into a container; cool them in the fridge or freezer.
Tip: eat your delicious choc-coconut balls with ButtaNutt nut butter. YUM!
