Gluten Free Oat & Dates Cookies (high protein)

The Perfect soft and chewy consistency. Naturally protein rich and naturally sweetened with date syrup & coconut sugar.


INGREDIENTS

  • 1 cup Teff Flour (naturally rich in protein)

  • 1/2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • 1/2 Coconut Oil (melted)

  • 1/2 cup Coconut Sugar

  • 1/3 cup Date Syrup (I used Silan Date Syrup)

  • 1 tsp Vanilla Extract/ Essence

  • 1 large Egg (free range)

  • 1 cup Gluten Free Rolled Oats/ Oatmeal

  • 3/4 cup Chopped up Dates (medjool dates for best result)

  • 1/2 cup Sunflower Seeds


METHOD

  1. Mix all the dry ingredients together (besides the coconut sugar)

  2. Mix all the wet ingredients together (including the coconut sugar)

  3. Pour wet mixture into dry mixture and mix well. Should be quite a dry mixture.

  4. Scoop up equal amounts & roll into balls and place on prepared baking tray (cookie tray prepared with baking paper and spray and cook)

  5. Flatten balls into biscuit like circles (see pictures for shape)

  6. Place in pre heated oven 175° for about 15 minutes (oven dependent)

  7. Leave to cool in baking tray

  8. Add toppings and enjoy with a cup of tea

Add a small amount of coconut oil and macadamia nut butter (nut butter of choice) in a bowl and heat up in the microwave until liquid-like and drizzle the cookies then add a few I chopped up dates to the top.
