These delicious pancakes are super quick and easy to whip up and are jammed packed full of protein. I often makes these for breakfast and they are my favourite after workout treat. Super healthy balanced pancake.
This recipe is a perfect serving for 2 people

60 grams Rolled Oats / Oatmeal
1 Whole Egg (free range)
5 Egg Whites / 180-200 grams
2 tsp Cinnamon (add a little extra if you would like :) )
1 Whole Medium Green Apple (grated)
Pinch of salt
1 scoop/ 16 grams Collagen (I used O'nutricia Collagen)
3 scoops / 48 grams Vanilla Isolate Protein Powder (I used Nutritech)
Add all ingredients into a hand blender jar except the grated apple
Blend all ingredients until smooth
Stir in grated into the mixture, do 2 to 3 pluses with the blender ( the apple shouldn't be completely blended make sure to keep it textured)
Heat pan up on a high heat
Use pray and Cook to grease the pan
Measure out mixture with ⅓ cup and pour into hot pan, when bubbles start to form on the top flip the pancake over.
Once all pancakes are made up top with nut butter of your choice (I used pecan & macadamia nut butter from ButtaNutt Spreads - RECOMMENDED) sprinkle some chia seeds and add some dried apple. But really you can be as creative as you wish with the toppings.
